
Healthy Snacks & Desserts
Seed Crackers
Pre heat oven to 180 degrees.
Combine:
175g ground mixed nuts
50g ground flaxseed
50g pumpkin seeds
50g chia seeds
1 beaten egg
3tbs melted coconut oil
1/2tsp salt
1/4tsp bicarb soda.
Roll into a ball then spread out onto a lined baking tray until even and flat.
Bake in oven for 15-20 minutes or until edges are brown. Remove from oven, cool on a tray and then break into pieces.
Energy Balls
Combine and mix:
125g nuts (almonds, walnuts, cashews, hazelnuts)
250g dried fruit (figs, dates, blueberries, cranberries)
2tsp powder (maca, acai, protein)
1tbs natural sweetener (honey, agave, fruit puree)
Topping
Cacao, coconut, crushed nuts or seeds.

Roll into balls, then roll into topping, or spread into tin and sprinkle with topping.

Chill to firm.
Granola Bars
Bars
Combine:
2 cups of quick rolled oats
1/3 cup coconut sugar
1 cup wholemeal self-raising flour
1tsp cinnamon
1tsp vanilla extract
½ cup of honey or rice syrup
2tbs coconut oil
¼ cup sunflower seeds
¼ cup pepitas
1tbs flax or chia seeds.

Mix all ingredients.

Bake @ 160 degrees for 20 minutes.

Let cool and cut.
Chocolate
Combine and cook on medium heat:
1/3 cup coconut oil
1/3 cup cacao powder
¼ cup honey
Drizzle chocolate over bars!
Berry Smoothie Block
Ingredients
2/3 cup orange juice
3/4 cup frozen mixed berries

Blend all ingredients until smooth.

Pour into moulds and freeze for at least 4 hours.
Pineapple Coconut
Smoothie Block
Ingredients
2 1/2 cups fresh pineapple
1 cup of coconut almond milk
1 tbs honey
1/4 cup finely shredded coconut
1/4 tsp vanilla extract

Blend all ingredients until smooth.

Pour into moulds and freeze for at least 4 hours.
PB Choc & Avocado Pudding
Ingredients
1 1/2 ripe avocados
1 large ripe banana
1/2 cup unsweetened cocoa or cacao powder
1/2 cup of peanut butter or other nut butter of choice
1/4 cup of sweetener of choice
(maple syrup, agave or honey)
1/4 cup almond milk or other plant based milk

Blend all ingredients until creamy and smooth.

Add more milk, cocoa or sweetener to change consistency and sweetness depending on preference.

Divide between 6 small serving glasses and chill for approx 3 hours.

Top with coconut whipped cream if desired.
Fruit Salad & Honey Lime Dressing
Ingredients
1 1/4 cups mixed berries
1 1/2 cups rockmelon
3/4 cup diced pineapple
1/2 cup grapes
1/2 cup dried cranberries
2 1/2 tbs honey
1/2 tsp fresh lime zest
1 1/2 tbs fresh lime juice
2 tbs fresh mint leaves

In a large bowl, toss together all fruit

In a small bowl, combine honey, lime zest and lime juice.

Mix together fruit and dressing

Garnish with mint leaves
